How to make Beetroot and Arbi Falafel with House-made Pickle

  • Step 1

    To prepare this snack recipe, preheat the oven at 180 degrees Celsius. Season a whole beetroot with salt, pepper and a drizzle of olive oil. Now, wrap it in aluminium foil and bake in a preheated oven for 30-35 minutes. Once baked, take it out from the oven and roughly chop it. Now, add the roughly chopped beetroot, arbi, green chilli and boiled chick peas in a blender jar and blend it smooth.

  • Step 2

    Transfer the blended paste in a bowl and add red chilli powder, cumin powder, coriander powder, salt and black pepper powder in it. Mix it well. Now, take small portions from the mixture and press them between your plams to make patties. Heat refined oil in a deep-bottomed pan over medium flame. When the oil is hot enough, add the patties to it and deep fry them until they are golden-brown in color. Once done, take them off the flame and place them on a plate lined with absorbent paper.

  • Step 3

    For the house-made pickle, place a sauce pan over medium flame and add white vinegar, salt, sugar, coriander seeds, bay leaves and jalapenos in it. Once it comes to a boil, add the radish, cucumber, carrots and green papaya slices to it. Mix them well. Once done, take the pan off the fire and let the vegetables soak in the hot juices.

  • Step 4

    For assembling, place the fried falafel on a plate and serve with the pickled vegetables to enjoy!
